Easy Lemon Coconut Cake Mix Bars Recipe

Preparation time: 15 minutes

Cooking time: 40 minutes

Chilling time: 30 minutes

Serves: 3-4 people

Ingredients:

  • 1 box lemon cake mix
  • 4 cup Dabur Lemoneez
  • 1 tsp lemon zest
  • ½ cup unsalted butter
  • 1 egg
  • ½ cup grated coconut

 

For garnish:

  • Grated coconut
  • Powdered sugar

How to Prepare Lemon Coconut Cake Mix Bars:

  • Before starting any preparation, put the oven on and let it pre-heat on 350 degrees Fahrenheit
  • Now in a bowl, put the lemon cake mix, stir it properly to smoothen any lumps and set aside
  • If the butter you are using is too cold or hard, microwave it only till the point it attains creamy consistency. Avoid using melted butter for the preparation process.
  • Now to the cake mix (that was earlier set aside), add butter, egg, grated coconut, lemon juice/Dabur Lemoneez and fresh lemon zest
  • Stir properly with the help of a whisker, making sure the mix is smooth and free of any lumps
  • Take a baking dish and spray it with oil or line it with butter paper to ensure easy and hassle-free unmolding of the cake
  • Put the baking dish inside the oven and bake for 25-30 minutes or till the top has turned golden brown
  • After 25 minutes, take the cake dish out and do the needle or knife test to see if the cake is done or requires more minutes inside the oven
  • Just slide a knife inside the cake and take it out. If the knife comes out clean, it means the cake is done. If it has the batter sticking to it, it means the cake would require few more minutes inside the oven. Slide the cake back and wait for another 5-7 minutes before taking it out and checking it again. Repeat the process till the knife or the needle comes out clean.
  • Once the cake is done, unmold it and transfer it to a steel rack and wait for it to cool down
  • Once the cake has cooled down, garnish it with grated coconut and on top sprinkle powdered sugar
  • Cut the cake into big chunks or square pieces and serve with tea or coffee

In addition to the garnish, you can even prepare a rich and custardy lemon sauce that you can put on the top of the cake to make it gooey and taste even more delectable.

To Prepare Lemon Sauce:

  • In a double boiler combine 2 eggs and 1 cup granulated sugar. Whisk until smooth.
  • Add ½ cup freshly squeezed lemon juice, 1 tbsp lemon zest and 2 tbsp butter and keep stirring continuously
  • Let it cook for 10-12 minutes or until the sauce coats the back of the spoon
  • To test the consistency of the sauce, dip a spoon in the sauce and using your finger make a path down the back of the spoon. If the path is clear and no sauce runs into it, it means the sauce is ready

Pour it over the cake and serve
